Ingredients
- 1 ½ cups almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon sweetener (erythritol or your choice)
- 2 large eggs
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 2 tablespoons soft cream cheese (halal)
- 2 tablespoons sweetener
- 1 tablespoon cinnamon
- Sugar-free syrup (for serving)
- Chopped nuts (optional)
- A sprinkle of powdered sweetener for aesthetics
Instructions
- Prepare the Dough: In a medium bowl, mix the almond flour, coconut flour, baking powder, cinnamon, nutmeg, and sweetener together until well combined. In a separate bowl, whisk the eggs, almond milk, and vanilla extract until frothy. Gradually add the wet ingredients to the dry ingredients, mixing until you achieve a dough-like consistency.
- Create the Cinnamon Swirl: In another bowl, blend the soft cream cheese, sweetener, and cinnamon until smooth. This mixture will be your cinnamon swirl.
- Shape the Bites: Preheat your air fryer to 320°F (160°C). Lightly grease the inside of the air fryer basket with cooking spray. Take small portions of the dough and flatten them in your palm. Add a teaspoon of the cinnamon swirl in the center and fold the dough around it, creating little balls. Repeat until all dough is used.
- Cook in the Air Fryer: Place the cinnamon roll bites in the air fryer in a single layer, making sure not to overcrowd the basket. Cook for 8-10 minutes, checking for a golden-brown exterior.
- Serve Warm: Once cooked, carefully remove the bites from the air fryer. Drizzle with sugar-free syrup, sprinkle with chopped nuts if desired, and finish with a dash of powdered sweetener.
