Ingredients
- 1 cup riced cauliflower (fresh or frozen)
- 1 cup cooked and chopped spinach (or any green of your choice)
- ½ cup grated zucchini (excess moisture squeezed out)
- ½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)
- ½ cup almond flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon chili flakes (optional for a little heat)
- Cooking spray or a bit of olive oil for greasing the air fryer basket
Instructions
- Prep Your Ingredients: If you’re using fresh cauliflower, steam it lightly before ricing it. For frozen riced cauliflower, thaw and drain excess moisture. Cook and chop your green of choice and grate the zucchini.
- Mix the Base: In a large mixing bowl, combine the riced cauliflower, cooked spinach, grated zucchini, grated Parmesan cheese, and almond flour.
- Add Flavor: Introduce the garlic powder, onion powder, salt, black pepper, and chili flakes. Mix everything together until evenly combined.
- Incorporate Eggs: Crack the eggs into the mixture and stir well to ensure that all ingredients are well coated and sticky enough to form balls.
- Form the Balls: Using your hands, take approximately a tablespoon of the mixture and roll it into balls. Aim for a size that will fit comfortably in your palm.
- Prepare the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Lightly spray or brush the air fryer basket with cooking spray or olive oil.
- Cook the Balls: Place the vegetable balls in the air fryer basket in a single layer, making sure there’s space between each one. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve and Enjoy: Once done, remove the vegetable balls from the air fryer and let them cool for a few minutes before serving. Enjoy them warm with a dipping sauce of your choice.
