  • 1 cup riced cauliflower (fresh or frozen)
  • 1 cup cooked and chopped spinach (or any green of your choice)
  • ½ cup grated zucchini (excess moisture squeezed out)
  • ½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • ½ cup almond flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chili flakes (optional for a little heat)
  • Cooking spray or a bit of olive oil for greasing the air fryer basket


Instructions

  1. Prep Your Ingredients: If you’re using fresh cauliflower, steam it lightly before ricing it. For frozen riced cauliflower, thaw and drain excess moisture. Cook and chop your green of choice and grate the zucchini.
  2. Mix the Base: In a large mixing bowl, combine the riced cauliflower, cooked spinach, grated zucchini, grated Parmesan cheese, and almond flour.
  3. Add Flavor: Introduce the garlic powder, onion powder, salt, black pepper, and chili flakes. Mix everything together until evenly combined.
  4. Incorporate Eggs: Crack the eggs into the mixture and stir well to ensure that all ingredients are well coated and sticky enough to form balls.
  5. Form the Balls: Using your hands, take approximately a tablespoon of the mixture and roll it into balls. Aim for a size that will fit comfortably in your palm.
  6. Prepare the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Lightly spray or brush the air fryer basket with cooking spray or olive oil.
