Ingredients
- 1.5 lbs chicken breast or thigh, boneless and skinless
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp sea salt
- ½ tsp black pepper
- Optional: 1 tsp cornstarch
- Optional: 2 tbsp Greek yogurt + 1 tbsp lemon juice
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut chicken into evenly sized bite pieces and pat dry.
- In a bowl, combine chicken with olive oil, spices, and optional cornstarch or yogurt marinade.
- Toss until fully coated and let marinate for at least 15 minutes if using yogurt/lemon.
- Spread chicken bites in a single layer on the prepared baking sheet, leaving space between each piece.
- Bake for 12–15 minutes, flipping halfway through.
- Check doneness with a thermometer — internal temperature should be 165°F (74°C).
- Optional: broil for the final 2 minutes for golden crisp edges.
- Remove from oven and let rest 3–5 minutes before serving.
