Ingredients
- 6 large eggs
- ¼ cup milk or cream
- ½ cup shredded cheddar cheese
- 1 small bell pepper (orange or red), finely diced
- ¼ cup chopped scallions
- Salt and black pepper to taste
- Cooking oil or butter (for the pan)
- Optional: thin slices of olives, mushrooms, or turkey strips for decoration
Instructions
- In a medium bowl, whisk together eggs, milk, salt, and black pepper until smooth.
- Heat a non-stick skillet over medium heat with a little butter or oil.
- Pour about ⅓ of the egg mixture into the pan, swirling to coat. Cook undisturbed 1–2 minutes until mostly set.
- Sprinkle with cheddar, bell peppers, and scallions. Fold the omelet gently in half and cook until cheese melts.
- Once slightly cooled, use a sharp knife or pumpkin-shaped cookie cutter to cut a Jack-o’-Lantern shape. Carve triangle eyes and a smile if desired.
- Serve warm, decorated with olives, mushrooms, or turkey strips for added character.
Notes
