Description

Warm, savory, and whimsical, these Jack-o’-Lantern Omelets are a playful take on a classic breakfast. Fluffy eggs filled with gooey cheddar, bell peppers, and scallions get carved into pumpkin faces—perfect for Halloween mornings, fall brunches, or just adding a smile to your day.


Ingredients

  • 6 large eggs
  • ¼ cup milk or cream
  • ½ cup shredded cheddar cheese
  • 1 small bell pepper (orange or red), finely diced
  • ¼ cup chopped scallions
  • Salt and black pepper to taste
  • Cooking oil or butter (for the pan)
  • Optional: thin slices of olives, mushrooms, or turkey strips for decoration


Instructions

  1. In a medium bowl, whisk together eggs, milk, salt, and black pepper until smooth.
  2. Heat a non-stick skillet over medium heat with a little butter or oil.
  3. Pour about ⅓ of the egg mixture into the pan, swirling to coat. Cook undisturbed 1–2 minutes until mostly set.
  4. Sprinkle with cheddar, bell peppers, and scallions. Fold the omelet gently in half and cook until cheese melts.
  5. Once slightly cooled, use a sharp knife or pumpkin-shaped cookie cutter to cut a Jack-o’-Lantern shape. Carve triangle eyes and a smile if desired.
  6. Serve warm, decorated with olives, mushrooms, or turkey strips for added character.

Notes

Don’t overfill the omelet—less is more for easy shaping. Use a non-stick pan for best results. Let omelets cool slightly before carving faces to prevent tearing.
