Description

A comforting casserole with rich, creamy filling, tender shredded chicken, and a golden, bubbly top, perfect for potlucks and chilly nights.


Ingredients

  • 3 cups cooked, shredded chicken
  • 2 cups frozen mixed vegetables, thawed
  • 8 oz cream cheese, softened
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese, plus 1/2 cup for topping
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 6 slices turkey bacon, cooked crisp and crumbled
  • 2 cups crushed buttery crackers or breadcrumbs
  • 2 tablespoons melted butter
  • Optional: chopped fresh parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Beat the softened cream cheese in a large bowl until smooth. Add sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. Fold in the shredded chicken, thawed mixed vegetables, and 1 cup shredded cheddar until evenly coated.
  4. Spread the mixture into the prepared baking dish. Top with the remaining 1/2 cup cheddar and crumbled turkey bacon.
  5. Combine crushed crackers with melted butter in a small bowl and scatter over the casserole.
  6. Bake uncovered for 25–30 minutes until bubbly and golden brown.
  7. Let the casserole rest for 5–10 minutes before serving. Garnish with parsley.

Notes

Use rotisserie chicken for best texture. Don’t overmix to keep the chicken tender.
