This Instant Pot Creamy Potato Ranch Dinner is the perfect cozy meal when the weather turns chilly. Inspired by grandma’s kitchen and packed with ranch flavor, this comforting dish comes together in just 25 minutes.
Ingredients
- 3 lbs red potatoes, cut into 1-inch cubes
- 3 slices of beef bacon, diced (or 1/4 cup real bacon bits)
- 1 packet (1 oz) dry ranch seasoning
- 1 cup chicken broth
- 1/2 tsp seasoned salt
- 2 oz cream cheese, cubed (or substitute with sour cream)
- 1 tbsp chopped parsley (fresh or 1 tsp dried)
Instructions
- Set your Instant Pot to sauté. Add diced bacon and cook until crisp. Remove with a slotted spoon if desired and set aside.
- Cancel sauté mode. Add cubed potatoes, dry ranch seasoning, seasoned salt, and chicken broth. Stir gently to coat.
- Seal the lid and set to manual/high pressure for 7 minutes. Quick release the steam once finished.
- Open lid and add cream cheese cubes, reserved bacon, and chopped parsley. Stir until the cheese melts and everything is creamy.
Notes
Red potatoes hold their shape best. Avoid Russets, which tend to break apart. For dairy-free, substitute with cashew cream or plant-based cream cheese.
