Ingredients
- 1 pound baby carrots (peeled, if needed)
- 2 tablespoons unsalted butter (or olive oil for dairy-free)
- 2 tablespoons honey
- 1 tablespoon light brown sugar
- 1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)
- Salt and black pepper to taste
- Optional: 1 tablespoon lemon juice
- Optional: Pinch of cinnamon or smoked paprika
Instructions
- Preheat oven to 400°F (200°C). Slice thicker carrots in half lengthwise for even cooking.
- In a bowl, toss baby carrots with melted butter, honey, brown sugar, thyme, salt, and pepper until evenly coated.
- Spread coated carrots in a single layer on a lined baking sheet.
- Roast for 25–30 minutes, flipping once halfway through, until carrots are tender and caramelized.
- Drizzle with lemon juice or a bit more honey before serving, if desired. Serve warm.
Notes
Slice large carrots to ensure even cooking. Fresh thyme enhances aroma, but dried works in a pinch. For a vegan version, swap butter with olive oil and honey with maple syrup.
