Description
A cozy and easy recipe for perfectly crispy cod and chips using an air fryer, perfect for a comforting weeknight meal or a special gathering.
Ingredients
- 4 cod fillets (about 6–8 oz each), patted dry
- 2 cups peeled potatoes, cut into chips (or use frozen chips)
- 1 cup all-purpose flour (or gluten-free flour blend)
- 1 tsp baking powder
- 1 tsp salt, plus extra for seasoning
- 1/2 tsp black pepper
- 1 tsp smoked paprika (optional)
- 1 large egg
- 1 cup cold sparkling water
- 1–2 tbsp olive oil or melted butter, for brushing chips
- Lemon wedges and chopped parsley, to serve
Instructions
- Toss the potato chips with 1 tbsp olive oil and a pinch of salt. Arrange them in a single layer in the air fryer basket (cook in batches if needed). Air fry at 200°C / 400°F for 15–20 minutes, shaking halfway, until golden and crisp.
- Whisk the flour, baking powder, 1 tsp salt, pepper, and smoked paprika in a bowl. Beat the egg in a separate bowl, then whisk in the cold sparkling water until the batter is smooth and slightly thick.
- Pat each fillet dry, dredge in a little extra flour, then dip into the batter, letting the excess drip off.
- Spray or brush the air fryer basket lightly with oil. Place battered fillets in a single layer and air fry at 200°C / 400°F for 10–12 minutes, flipping once, until the batter is golden and the fish flakes easily with a fork.
- Plate the fish with a generous helping of chips, lemon wedges, and a sprinkle of parsley. Serve with tartar sauce or a zesty vinegar dip.
Notes
For extra crunch, add a thin dusting of panko before air frying. Ensure to keep batter cold for the lightest crust.
