Ingredients
- 1 cup mayonnaise (or Greek yogurt for a lighter option)
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 1 tablespoon Dijon mustard
- 2 cloves garlic, finely minced or grated
- 1 tablespoon Worcestershire sauce
- ½ teaspoon sea salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 2–3 tablespoons olive oil (to thin, if needed)
- Optional: 1–2 finely chopped anchovies or 1 teaspoon anchovy paste
Instructions
- Mince the garlic finely or use a microplane grater for a smoother blend.
- In a medium mixing bowl, whisk together mayonnaise (or yogurt), Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, and garlic until smooth.
- Season with salt and pepper to taste.
- Optional: Stir in anchovy paste or finely chopped anchovies for deeper flavor.
- Slowly whisk in olive oil until desired consistency is reached.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Use freshly grated Parmesan for the best texture and flavor. Add lemon juice gradually to control tanginess. Thin with olive oil or a teaspoon of water if needed.
