Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- ½ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice (optional)
- ½ cup sour cream or Greek yogurt

Instructions
- Combine the graham cracker crumbs, melted butter, sugar, and a pinch of salt in a mixing bowl. Mix until well combined.
- Press the mixture into the bottom of an 8-inch springform pan, ensuring an even layer.
- Beat the softened cream cheese until smooth and creamy in a large bowl using an electric mixer.
- Gradually add the sugar and blend until combined.
- Add the eggs, one at a time, beating well after each addition.
- Stir in vanilla extract, lemon juice, and sour cream until the filling is smooth.
- Pour the cheesecake filling onto the prepared crust and smooth the top with a spatula.
- Preheat the air fryer to 320°F (160°C) for about 5 minutes.
- Place the pan inside the air fryer basket and air fry at 320°F for 25-30 minutes or until the edges are set and the center has a slight jiggle.
- Cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or overnight.
