Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 6 medium potatoes, peeled and thinly sliced (Yukon gold or russet)
  • 1 1/2 cups frozen mixed vegetables (carrots, peas, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup beef broth
  • 1/2 cup milk
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons butter, melted
  • 1 tablespoon brown sugar (for a gentle glaze)
  • Optional garnish: chopped parsley or chives


Instructions

  1. Prepare the oven and pan: Preheat to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Brown the meat: In a large skillet over medium heat, cook the ground beef with chopped onion until the meat is no longer pink and the onions are softened, about 6–8 minutes. Add garlic and cook 1 minute more. Drain excess fat.
  3. Make the sauce: Stir in cream of mushroom soup, beef broth, milk, tomato paste, Worcestershire sauce, thyme, salt, and pepper to the skillet. Simmer 3–4 minutes until warmed through and slightly thickened.
  4. Layer the casserole: Arrange half the potato slices in the bottom of the prepared dish. Spoon half the beef mixture over the potatoes, then sprinkle with half the frozen vegetables. Repeat with remaining potatoes, beef, and vegetables.
  5. Add the finishing touch: Mix melted butter with brown sugar and brush lightly over the top layer of potatoes. Cover tightly with foil.
  6. Bake: Bake covered for 45 minutes. Remove foil, sprinkle with cheddar if using, and bake 15–20 minutes more until potatoes are tender and the top is golden.
  7. Rest and serve: Let the casserole rest 10 minutes before serving to set. Garnish with chopped parsley or chives.

Notes

Slice potatoes uniformly for even cooking; a mandoline makes this quick. Don’t skip the rest time to help set the casserole.
