For the crust and crumble (shared base):

  • 1 ½ cups all-purpose flour

  • ¾ cup packed brown sugar

  • ½ cup granulated sugar

  • 1 tsp cinnamon

  • ¼ tsp salt

  • ¾ cup unsalted butter, cold and cubed

For the peach filling:

  • 2 ½ cups diced peaches (fresh, frozen, or canned & drained)

  • 2 tbsp granulated sugar

  • 2 tsp lemon juice

  • 1 tbsp cornstarch

  • ½ tsp vanilla extract (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 baking pan with parchment paper.

  2. Make the crumble base: In a large bowl, combine flour, both sugars, cinnamon, and salt. Cut in the cold butter with a pastry cutter or fingers until the mixture resembles coarse crumbs.

  3. Form the crust: Press half of the crumb mixture firmly into the prepared pan. Bake for 12 minutes until lightly golden.

  4. Prepare the filling: In another bowl, toss peaches with sugar, lemon juice, cornstarch, and optional vanilla.

  5. Assemble: Spread the peach mixture over the baked crust. Crumble the remaining dough evenly on top.

  6. Bake: Return to oven and bake 30–35 minutes, or until the top is golden brown and fruit is bubbling.

  7. Cool completely before slicing. Chill for cleanest cuts.

Notes

  • You can use frozen peaches—just thaw and drain well first.

  • Add blueberries, raspberries, or chopped nuts for fun variations.
