These Heavenly Summer Peach Bars are the ultimate sunny dessert—juicy peaches tucked between buttery layers of crumble. Whether made with fresh, frozen, or canned fruit, they’re simple to bake, easy to share, and always delicious.
Ingredients
For the crust and crumble (shared base):
1 ½ cups all-purpose flour
¾ cup packed brown sugar
½ cup granulated sugar
1 tsp cinnamon
¼ tsp salt
¾ cup unsalted butter, cold and cubed
For the peach filling:
2 ½ cups diced peaches (fresh, frozen, or canned & drained)
2 tbsp granulated sugar
2 tsp lemon juice
1 tbsp cornstarch
½ tsp vanilla extract (optional)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 baking pan with parchment paper.
Make the crumble base: In a large bowl, combine flour, both sugars, cinnamon, and salt. Cut in the cold butter with a pastry cutter or fingers until the mixture resembles coarse crumbs.
Form the crust: Press half of the crumb mixture firmly into the prepared pan. Bake for 12 minutes until lightly golden.
Prepare the filling: In another bowl, toss peaches with sugar, lemon juice, cornstarch, and optional vanilla.
Assemble: Spread the peach mixture over the baked crust. Crumble the remaining dough evenly on top.
Bake: Return to oven and bake 30–35 minutes, or until the top is golden brown and fruit is bubbling.
Cool completely before slicing. Chill for cleanest cuts.
Notes
You can use frozen peaches—just thaw and drain well first.
Add blueberries, raspberries, or chopped nuts for fun variations.
Bars taste even better the next day after chilling.
