Ingredients
- 1 cup pumpkin puree

- 1/3 cup maple syrup or honey

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips, raisins, or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together pumpkin puree, nut butter, maple syrup, and eggs until smooth.
- Stir in oats, baking powder, cinnamon, nutmeg, and salt.
- Fold in optional add-ins like chocolate chips or nuts.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25–30 minutes, or until bars are firm and edges are lightly golden.
- Cool completely in the pan before slicing into bars.
