Description
These Healthy Chicken Nuggets are light on oil but big on flavor, making them a perfect cozy snack for any time.
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
- 1 cup plain whole-wheat breadcrumbs or panko for extra crisp
- 1/2 cup finely grated Parmesan cheese
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 2 tablespoons olive oil (for brushing or drizzling)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray or brush with oil.
- Pat the chicken pieces dry with paper towels so the coating adheres well. Set aside.
- In a shallow bowl, combine breadcrumbs, grated Parmesan, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Place beaten eggs in another shallow bowl. Working in batches, dip each chicken piece into the egg, letting excess drip off, then roll in the breadcrumb mixture, pressing gently to coat.
- Place the coated nuggets on the prepared baking sheet. Lightly brush or drizzle olive oil over each nugget.
- Bake for 12–15 minutes, flipping once halfway through, until the internal temperature reaches 165°F (74°C) and the exterior is golden brown.
- Let the nuggets rest 2–3 minutes before serving. Garnish with fresh parsley and offer your favorite dipping sauces.
Notes
For a gluten-free version, swap the breadcrumbs for gluten-free panko or crushed cornflakes.
