Ingredients

  • 2 boneless, skinless chicken breasts (about 1 to pounds total)
  • 1½ tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme or oregano
  • Zest and juice of ½ lemon (optional)
  • 1 tablespoon plain breadcrumbs or panko (or almond flour for gluten-free)


Instructions

  1. Prep the chicken: Pat the chicken breasts dry with paper towels and pound to an even thickness if needed.
  2. Season: In a bowl, whisk together olive oil, salt, pepper, paprika, garlic powder, onion powder, thyme, lemon zest, and juice. Rub over chicken.
  3. Preheat the air fryer: Preheat to 375°F (190°C) for 3–5 minutes.
  4. Cook: Place the chicken in a single layer in the air fryer basket and cook at 375°F for 10–12 minutes, flipping halfway through.
  5. Check doneness: Ensure internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
