Ingredients

  • 4 bone-in, skin-on chicken thighs (or boneless for quicker cook)
  • 1/4 cup soy sauce (gluten-free if needed)
  • 1/4 cup pineapple juice (fresh or canned)
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon sesame oil
  • Green onions, chopped (for garnish)
  • Sesame seeds (for an added crunch)


Instructions

  1. Marinate the chicken: In a large bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, minced garlic, minced ginger, black pepper, and sesame oil. Add chicken thighs, cover, and refrigerate for at least 30 minutes.
  2. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  3. Air fry the chicken: Remove chicken from marinade and let excess drip off. Place in the air fryer basket, skin side down. Cook for 18-22 minutes, flipping halfway through.
  4. Crisp the skin: Turn air fryer to 425°F (220°C) and cook for an additional 2-3 minutes.
  5. Garnish and serve: Remove chicken, sprinkle with green onions and sesame seeds, and serve warm.
