Description

Enjoy the comforting essence of fall flavors with this scrumptious egg-based baked treat that brightens any kitchen.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 4 large eggs
  • ½ cup vegetable oil (or any neutral oil)
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Combine the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg in a large mixing bowl, whisking until well combined.
  3. Mix the eggs lightly in a separate bowl. Then add in the vegetable oil, pumpkin puree, and vanilla extract, mixing thoroughly until smooth.
  4. Combine the wet ingredients into the dry ingredients gradually, stirring until just combined. Be cautious not to overmix; a few lumps are okay. If desired, fold in the pecans or walnuts.
  5. Bake the batter in the prepared baking pan for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  7. Serve warm or at room temperature, optionally dusted with powdered sugar for a festive touch.

Notes

Use room temperature ingredients for better mixing and avoid overmixing for a lighter texture.
