Description

A cozy, seasonal dish featuring tender, crispy potatoes with elegant slits that create fluffy insides.

Ingredients

  • 4 medium to large russet potatoes
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • Fresh herbs for garnishing (like rosemary or thyme)
  • Grated Parmesan cheese (optional)
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and wash the russet potatoes thoroughly.
  2. Pat them dry and place each potato between two wooden chopsticks or spoons.
  3. Using a sharp knife, make thin slices in the potatoes, about 1/8 inch apart.
  4. Mix the olive oil, minced garlic, sea salt, black pepper, and paprika in a small bowl.
  5. Brush this mixture liberally over the potatoes, ensuring it seeps into the cracks.
  6. Line a baking sheet with parchment paper and place your prepared potatoes on it.
  7. Roast in the oven for about 45-60 minutes, basting halfway through with the remaining oil mixture.
  8. Remove from the oven, sprinkle with grated Parmesan cheese if desired, and return for an additional 5 minutes until melted.
  9. Garnish with fresh herbs before serving.

Notes

For best results, choose firm, starchy potato varieties like russet or Yukon Gold. Baste regularly for infused flavor.
