A cozy, seasonal dish featuring tender, crispy potatoes with elegant slits that create fluffy insides.
Ingredients
- 4 medium to large russet potatoes
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- Fresh herbs for garnishing (like rosemary or thyme)
- Grated Parmesan cheese (optional)
- Sour cream or Greek yogurt (optional)
Instructions
- Preheat your oven to 425°F (220°C) and wash the russet potatoes thoroughly.
- Pat them dry and place each potato between two wooden chopsticks or spoons.
- Using a sharp knife, make thin slices in the potatoes, about 1/8 inch apart.
- Mix the olive oil, minced garlic, sea salt, black pepper, and paprika in a small bowl.
- Brush this mixture liberally over the potatoes, ensuring it seeps into the cracks.
- Line a baking sheet with parchment paper and place your prepared potatoes on it.
- Roast in the oven for about 45-60 minutes, basting halfway through with the remaining oil mixture.
- Remove from the oven, sprinkle with grated Parmesan cheese if desired, and return for an additional 5 minutes until melted.
- Garnish with fresh herbs before serving.
Notes
For best results, choose firm, starchy potato varieties like russet or Yukon Gold. Baste regularly for infused flavor.
