Description
This Ground Beef Taco Bowl (Healthy Style) is a hearty, comforting, and healthy meal loaded with seasoned lean beef, colorful veggies, and grains. Inspired by a taco-style rice bowl shared by a local family during my travels, this version keeps all the flavor without the heaviness. Perfect for meal prep or a quick dinner.
Ingredients
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 cup corn kernels (fresh or frozen)
- 1 cup black beans, rinsed and drained
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- Salt and black pepper to taste
- Juice of 1 lime
- ¼ cup chopped fresh cilantro
- 2 cups cooked brown rice or cauliflower rice
- Optional Toppings:
- Sliced avocado
- Shredded cheese
- Greek yogurt or sour cream
- Fresh salsa or pico de gallo
- Lime wedges
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and garlic. Cook for 2–3 minutes until fragrant.
- Add the ground beef and cook until browned, about 6–7 minutes, breaking it into crumbles as it cooks.
- Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Stir to coat the beef evenly.
- Mix in chopped bell pepper, corn, and black beans. Cook for another 5 minutes until veggies are tender.
- Turn off the heat. Stir in fresh lime juice and chopped cilantro.
- Assemble the bowls with warm rice or cauliflower rice, beef-veggie mix, and your favorite toppings.
Notes
Use lean beef for less grease. Fresh toppings like avocado and lime brighten the dish. Great for meal prep—store components separately and reheat when ready. For a low-carb option, use cauliflower rice.
