Description

Light, flavorful, and protein-packed, these grilled shrimp skewers under 200 calories are perfect for healthy meals, whether it’s a weeknight dinner or weekend barbecue.


Ingredients

  • 1 pound large shrimp, peeled and deveined (about 24 pieces)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon chili flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving
  • Bamboo or metal skewers


Instructions

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, chili flakes, salt, and pepper. Toss in the shrimp and stir to coat evenly. Let it marinate for 15–30 minutes in the fridge.
  2. Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grates to prevent sticking.
  3. Thread the marinated shrimp onto skewers, about 4–5 shrimp per skewer. Avoid packing them too tightly.
  4. Place the skewers on the hot grill and cook for 2–3 minutes per side, or until the shrimp turns pink and slightly charred.
  5. Remove from grill, sprinkle with fresh parsley, and serve with lemon wedges.

Notes

Use large shrimp (16/20 count) for best results. Avoid overcooking to prevent rubbery texture. Bamboo skewers should be soaked for 30 minutes before grilling.
