Ingredients
- 2 boneless, skinless chicken breasts (poached, grilled, or rotisserie)
- 1/2 cup Greek yogurt (or light mayonnaise)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic
- 1/4 cup chopped parsley
- 1/4 cup chopped basil
- 1 tablespoon chopped tarragon
- 1 teaspoon Dijon mustard or 1/2 tsp anchovy paste (optional)
- 1/2 cup diced cucumber
- 1/2 cup diced celery
- 1/4 cup diced radish or avocado (optional)
- Salt and pepper to taste
Instructions
- Cook the chicken: poach, grill, or roast the chicken breast. Let it rest, then dice or shred. Use pre-cooked rotisserie chicken if preferred.
- Make the dressing: blend Greek yogurt, olive oil, lemon juice, garlic, herbs, salt, pepper, and anchovy paste (if using) until smooth and green.
- Chop the veggies: dice cucumber, celery, radish, or avocado into small chunks.
- Toss together: in a large bowl, mix chicken, veggies, and dressing until evenly coated. Adjust seasoning to taste.
- Serve or chill: enjoy immediately or refrigerate for 1–2 hours for deeper flavor. Keeps for up to 4 days.
