Description

Ingredients

  • 2 boneless, skinless chicken breasts (poached, grilled, or rotisserie)
  • 1/2 cup Greek yogurt (or light mayonnaise)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil
  • 1 tablespoon chopped tarragon
  • 1 teaspoon Dijon mustard or 1/2 tsp anchovy paste (optional)
  • 1/2 cup diced cucumber
  • 1/2 cup diced celery
  • 1/4 cup diced radish or avocado (optional)
  • Salt and pepper to taste


Instructions

  1. Cook the chicken: poach, grill, or roast the chicken breast. Let it rest, then dice or shred. Use pre-cooked rotisserie chicken if preferred.
  2. Make the dressing: blend Greek yogurt, olive oil, lemon juice, garlic, herbs, salt, pepper, and anchovy paste (if using) until smooth and green.
  3. Chop the veggies: dice cucumber, celery, radish, or avocado into small chunks.
  4. Toss together: in a large bowl, mix chicken, veggies, and dressing until evenly coated. Adjust seasoning to taste.
  5. Serve or chill: enjoy immediately or refrigerate for 1–2 hours for deeper flavor. Keeps for up to 4 days.

Notes
