Description

These oven-baked S’more Bars capture all the gooey, melty magic of classic campfire s’mores in a soft, chewy dessert bar. Packed with graham crackers, chocolate, and marshmallows, they’re the perfect fall comfort treat.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1½ cups light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1½ cups crushed graham crackers (about 12 full sheets)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups semi-sweet chocolate chips (or chopped chocolate)
  • 2 cups mini marshmallows
  • ½ cup crushed graham crackers (for sprinkling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper or lightly grease it for easy removal.
  3. In a large bowl, whisk together melted butter and brown sugar until smooth.
  4. Beat in the eggs and vanilla extract until fully incorporated.
  5. In a separate bowl, combine flour, graham cracker crumbs, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet, stirring until a soft dough forms.
  7. Press two-thirds of the dough into the bottom of your prepared baking dish to form an even layer.
  8. Sprinkle the chocolate chips evenly over the dough.
  9. Add a layer of mini marshmallows.
  10. Crumble the remaining dough over the top in chunks—it won’t fully cover the marshmallows, and that’s okay!
  11. Sprinkle the last ½ cup of crushed graham crackers over the top for a rustic finish.
  12. Bake for 25–30 minutes, or until the top is golden brown and the edges begin to pull away from the sides.
  13. Allow the bars to cool completely in the pan before slicing for the cleanest cuts.

Notes

Cool before cutting for clean slices. Use parchment for easy removal. Don’t overbake—bars set more as they cool. Customize with streusel, peanut butter chips, or nuts for creative twists.
