Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup buttermilk (or milk + 1 tbsp lemon juice)
- 1 cup gluten free panko or crushed gluten free cereal
- 1/2 cup gluten free flour
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
- Cooking spray or oil for air frying/baking
Instructions
- Cut chicken into bite-size pieces. Place in a bowl and cover with buttermilk. Let soak 20–30 minutes.
- In another bowl, mix gluten free panko or crushed cereal with garlic powder, paprika, salt, and pepper.
- Preheat oven to 400°F (200°C) or heat air fryer.
- Remove chicken from buttermilk, dredge each piece in gluten free flour, dip back in buttermilk, then coat in crumb mix.
- Arrange nuggets on a lined baking sheet or air fryer basket in a single layer. Lightly spray with oil.
- Bake 15–20 minutes or air fry 10–12 minutes until golden and cooked through. Flip once for even crispiness.
- Serve warm with your favorite dips and sides.
Notes
Double coat nuggets for extra crunch. Store leftovers in an airtight container. Reheat in the oven or air fryer for best texture — skip the microwave.
