- 1 fully-cooked ham joint (about 5-7 pounds)
- 1 cup brown sugar
- 1/2 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 3-4 medium carrots, peeled and sliced
- 3-4 medium parsnips, peeled and sliced
- 2 cups Brussels sprouts, trimmed and halved
- 1 red onion, peeled and cut into wedges
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the brown sugar, honey, Dijon mustard, apple cider vinegar, ground cinnamon, and ground cloves in a small saucepan over medium heat until dissolved.
- Place the ham joint in a large roasting pan and score its surface in a diamond pattern.
- Brush half of the glaze over the ham surface.
- Toss the carrots, parsnips, Brussels sprouts, and red onion with olive oil, salt, and pepper.
- Spread the vegetables around the ham in the roasting pan.
- Cover the pan loosely with aluminum foil and roast for 1.5 to 2 hours, basting every 30 minutes.
- Remove the foil for the last 30 minutes to allow the ham to caramelize.
- Check the internal temperature of the ham; it should read at least 140°F (60°C).
- Let the ham rest for 15-20 minutes before slicing and serving with the vegetables.
Notes
Basting the ham regularly keeps it moist. Prepare the glaze ahead for quicker assembly.
