A cozy and flavorful meatloaf with garlic and Parmesan, perfect for autumn dinners.
Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup grated Parmesan cheese
- 1 cup fresh breadcrumbs
- 1 large egg
- 1/2 cup whole milk
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup (for glaze)
- 1 tablespoon Dijon mustard (for glaze)
- 1 tablespoon brown sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment or lightly oil a loaf pan.
- Mix the ground beef, Parmesan, breadcrumbs, egg, milk, minced garlic, chopped onion, parsley, oregano, salt, and pepper in a large bowl until just combined.
- Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan. Mix the ketchup, Dijon, and brown sugar, then spread half of the glaze over the top.
- Bake for 45–55 minutes, until the internal temperature reaches 160°F (71°C). About 10 minutes before end, spread the remaining glaze and return to the oven.
- Rest the meatloaf for 10 minutes before slicing for cleaner slices.
Notes
Don’t overwork the meat; use fresh breadcrumbs for lighter texture. Glaze can be added before baking for a richer flavor.
