Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 1/2 cup whole milk
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup (for glaze)
  • 1 tablespoon Dijon mustard (for glaze)
  • 1 tablespoon brown sugar (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment or lightly oil a loaf pan.
  2. Mix the ground beef, Parmesan, breadcrumbs, egg, milk, minced garlic, chopped onion, parsley, oregano, salt, and pepper in a large bowl until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan. Mix the ketchup, Dijon, and brown sugar, then spread half of the glaze over the top.
  4. Bake for 45–55 minutes, until the internal temperature reaches 160°F (71°C). About 10 minutes before end, spread the remaining glaze and return to the oven.
  5. Rest the meatloaf for 10 minutes before slicing for cleaner slices.

Notes

Don’t overwork the meat; use fresh breadcrumbs for lighter texture. Glaze can be added before baking for a richer flavor.
