This savory and moist Garlic Parmesan Chicken Meatloaf is a cozy dish perfect for family dinners and gatherings.
Ingredients
- 1.5 lb ground chicken
- 1 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 cup grated Parmesan-style cheese
- 2 large eggs, lightly beaten
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1/4 cup plain yogurt or mayonnaise
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (for sautéing)
- Optional glaze: 1/3 cup ketchup, 1 tablespoon honey, and 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
- Heat olive oil in a small skillet over medium heat. Add diced onion and cook until translucent, about 4 minutes. Add minced garlic and sauté 30 seconds until fragrant. Let cool slightly.
- In a large bowl combine ground chicken, breadcrumbs, grated Parmesan-style cheese, beaten eggs, parsley, oregano, smoked paprika, salt, and pepper. Add the cooled onion-garlic mixture and the yogurt or mayonnaise. Mix gently with your hands or a sturdy spoon until just combined.
- Transfer the mixture to the prepared loaf pan and press evenly. Spread the optional glaze over the top if using.
- Bake uncovered for 45–55 minutes, until the internal temperature reaches 165°F (74°C) and the top is golden.
- Let the Garlic Parmesan Chicken Meatloaf rest 10 minutes before slicing.
