Description

This savory and moist Garlic Parmesan Chicken Meatloaf is a cozy dish perfect for family dinners and gatherings.


Ingredients

  • 1.5 lb ground chicken
  • 1 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1 cup grated Parmesan-style cheese
  • 2 large eggs, lightly beaten
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup plain yogurt or mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for sautéing)
  • Optional glaze: 1/3 cup ketchup, 1 tablespoon honey, and 1 teaspoon Dijon mustard


Instructions

  1. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
  2. Heat olive oil in a small skillet over medium heat. Add diced onion and cook until translucent, about 4 minutes. Add minced garlic and sauté 30 seconds until fragrant. Let cool slightly.
  3. In a large bowl combine ground chicken, breadcrumbs, grated Parmesan-style cheese, beaten eggs, parsley, oregano, smoked paprika, salt, and pepper. Add the cooled onion-garlic mixture and the yogurt or mayonnaise. Mix gently with your hands or a sturdy spoon until just combined.
  4. Transfer the mixture to the prepared loaf pan and press evenly. Spread the optional glaze over the top if using.
  5. Bake uncovered for 45–55 minutes, until the internal temperature reaches 165°F (74°C) and the top is golden.
  6. Let the Garlic Parmesan Chicken Meatloaf rest 10 minutes before slicing.
