Description
A quick and easy skillet dinner featuring juicy beef cubes seared in garlic butter, perfect for busy evenings.
Ingredients
- 1.5 lbs beef sirloin or top round, cut into 1-inch cubes
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme or 1 tbsp fresh thyme leaves
- Salt and freshly ground black pepper, to taste
- 1–2 tbsp chopped fresh parsley (optional)
- Lemon wedges, for serving
Instructions
- Pat the beef cubes dry with paper towels and season generously with salt, pepper, and smoked paprika.
- Heat a large heavy skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. When shimmering, add half the beef in a single layer — don’t overcrowd the pan.
- Sear each side for 1–2 minutes until a deep brown crust forms. Flip with tongs and sear the remaining sides. Remove to a plate and repeat with the remaining beef.
- Reduce heat to medium, add the remaining butter and minced garlic to the pan. Stir until fragrant, about 30 seconds, then return all steak to the skillet and toss to coat in the buttery sauce. Add thyme and chopped parsley, toss, and remove from heat. Serve with lemon wedges.
Notes
Use a heavy skillet for best results. Make sure the steak is dry before searing for a good crust.
