Ingredients
- 1½ pounds fresh carrots (peeled, tops trimmed, halved if large)
- 2 tablespoons unsalted butter (melted)
- 1½ tablespoons raw honey
- 2 garlic cloves (minced finely)
- 1 tablespoon olive oil
- ½ teaspoon sea salt (or to taste)
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme or rosemary (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- Prepare the carrots. Wash and peel them. If some are thicker, slice them in half lengthwise to help them roast evenly.
- Make the garlic butter sauce. In a small bowl, mix the melted butter, honey, minced garlic, olive oil, salt, pepper, and herbs if using.
- Toss carrots in sauce. Pour the mixture over your carrots and toss until each piece is coated.
- Spread evenly on your baking sheet. Avoid crowding, give them room to caramelize!
- Roast for 25–30 minutes, flipping halfway. The edges should be golden and the centers tender.
- Optional: Broil for the last 2–3 minutes if you want extra crisp tips.
- Serve warm, topped with chopped parsley.
