Description

Delicious and flaky fruit scones perfect for fall, bursting with juicy dried fruits.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup mixed dried fruit (raisins, cranberries, or apricots)
  • 2/3 cup whole milk (or plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for brushing)


Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. Mix together the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Cut in the cold, cubed butter until it resembles coarse crumbs.
  4. Fold in the mixed dried fruit until evenly distributed.
  5. Combine the milk and vanilla extract in a separate bowl, and gradually add to the dry mixture, mixing gently.
  6. Shape the dough into a circle about 1-inch thick and cut into 8 wedges.
  7. Transfer to the prepared baking sheet and brush with beaten egg.
  8. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  9. Cool on a wire rack for a few minutes before serving.

Notes

Use cold ingredients for flakiness and donโ€™t overmix once wet ingredients are added. Experiment with different dried fruits.
