A cozy comfort food favorite, Fried Potatoes & Onions are crispy and flavorful, perfect as a side dish or main event.
Ingredients
- 2 large potatoes (Russet or Yukon Gold)
- 1 large onion (yellow or sweet)
- 3 tablespoons olive oil (or canola oil)
- Salt and pepper (to taste)
- 1 teaspoon garlic powder (optional)
- Fresh herbs (such as thyme or parsley, for garnish)
Instructions
- Begin by washing the potatoes thoroughly. Peel them if you prefer, but leaving the skin on adds a lovely texture. Cut the potatoes into thin slices, about 1/4 inch thick.
- Peel the onion and slice it into thin rings or half-moons, depending on your preference.
- Heat the olive oil in a large skillet over medium-high heat. Allow it to get hot but not smoking.
- Carefully add the potato slices to the skillet in a single layer. Let them cook without stirring for about 4-5 minutes until they begin to get golden on one side.
- Add the sliced onions to the pan, then stir everything together. Season with salt, pepper, and garlic powder if using.
- Continue to fry for another 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown and the onions are soft and caramelized.
- Remove the skillet from the heat. Sprinkle fresh herbs on top for a burst of flavor and serve warm!
Notes
Don’t overcrowd the pan for even browning. Experiment with additional flavors like paprika or cheese.
