Description

A cozy comfort food favorite, Fried Potatoes & Onions are crispy and flavorful, perfect as a side dish or main event.


Ingredients

  • 2 large potatoes (Russet or Yukon Gold)
  • 1 large onion (yellow or sweet)
  • 3 tablespoons olive oil (or canola oil)
  • Salt and pepper (to taste)
  • 1 teaspoon garlic powder (optional)
  • Fresh herbs (such as thyme or parsley, for garnish)


Instructions

  1. Begin by washing the potatoes thoroughly. Peel them if you prefer, but leaving the skin on adds a lovely texture. Cut the potatoes into thin slices, about 1/4 inch thick.
  2. Peel the onion and slice it into thin rings or half-moons, depending on your preference.
  3. Heat the olive oil in a large skillet over medium-high heat. Allow it to get hot but not smoking.
  4. Carefully add the potato slices to the skillet in a single layer. Let them cook without stirring for about 4-5 minutes until they begin to get golden on one side.
  5. Add the sliced onions to the pan, then stir everything together. Season with salt, pepper, and garlic powder if using.
  6. Continue to fry for another 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown and the onions are soft and caramelized.
  7. Remove the skillet from the heat. Sprinkle fresh herbs on top for a burst of flavor and serve warm!

Notes

Don’t overcrowd the pan for even browning. Experiment with additional flavors like paprika or cheese.
