A cozy autumn side dish that transforms humble cabbage into a flavorful delight with the savory addition of bacon, onion, and garlic.


Ingredients

  • 1 medium head of green cabbage, chopped
  • 4 slices of turkey bacon or halal bacon
  • 1 large onion, sliced
  • 3-4 cloves of garlic, minced
  • 2 tablespoons of olive oil or butter
  • Salt and pepper to taste
  • 1 tablespoon of apple cider vinegar (optional, for tang)
  • Fresh parsley or chives for garnish (optional)


Instructions

  1. Prepare the ingredients: Start by chopping your cabbage into small pieces, slicing the onion, and mincing the garlic. Set everything aside.
  2. Cook the bacon: In a large skillet over medium heat, add the turkey bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set it on a paper towel-lined plate to drain any excess grease. When cool, crumble or chop it into small pieces.
  3. Sauté the onion: In the same skillet, add olive oil or butter. Once hot, add the sliced onion and cook for about 3-4 minutes until it becomes translucent.
  4. Add the garlic: Stir in the minced garlic and cook for an additional 1-2 minutes. Be careful not to burn the garlic.
  5. Incorporate the cabbage: Add the chopped cabbage to the skillet. Stir well to incorporate the cabbage with the onions and garlic. Season with salt and pepper to taste.
  6. Cook until tender: Cover the skillet and allow the cabbage to cook down. After about 5 minutes, remove the lid and stir.
  7. Add the bacon and vinegar: Once the cabbage is cooked to your desired tenderness, stir in the crumbled bacon and apple cider vinegar, if using. Allow everything to sauté together for another 2-3 minutes.
  8. Serve it up: Remove from heat and garnish with fresh parsley or chives if desired. Serve warm as a satisfying side dish!
