Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar (for crust)
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries (plus extra for topping)
  • 2 cups fresh blueberries (for topping)
  • ¼ cup granulated sugar (for topping)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
  4. Bake the crust for 10 minutes, then remove it from the oven and let it cool.
  5. Beat the softened cream cheese in a large mixing bowl with an electric mixer until smooth and creamy.
  6. Add the sugar gradually, beating until fully incorporated.
  7. Mix in the vanilla extract.
  8. Add each egg one at a time, mixing well after each addition. Be careful not to overbeat.
  9. Fold in the sour cream and fresh blueberries until evenly distributed.
  10. Pour the cheesecake filling over the cooled crust in the springform pan.
  11. Bake in the preheated oven for 50–60 minutes, or until the center is set but still slightly jiggly.
  12. Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for about 1 hour.
  13. In a small saucepan over medium heat, combine the fresh blueberries, sugar, cornstarch, and lemon juice.
  14. Stir gently and cook until the blueberries begin to burst and the mixture thickens, about 5–7 minutes.
  15. Remove from heat and let it cool slightly.
  16. Spread the blueberry topping evenly over the top of the cheesecake once cooled.
  17. Refrigerate the cheesecake for at least four hours, or overnight for best results, to allow it to set completely.
