Description

A light and fluffy vanilla cake ideal for fall gatherings, easily made in an air fryer.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional)


Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Cream the softened butter until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the buttermilk, vanilla extract, and lemon juice until fully combined.
  6. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  7. Grease an 8-inch round cake pan that fits into your air fryer.
  8. Pour the batter into the prepared pan, smoothing the top with a spatula.
  9. Place the pan into the preheated air fryer and cook for 25-30 minutes.
  10. Remove the cake from the air fryer and cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature ingredients for best results. Avoid overmixing the batter to keep the cake light and fluffy.
