Description

A moist and nostalgic Elvis Presley Cake made with a soft yellow cake, sweet crushed pineapple, and a rich cream cheese frosting — the ultimate Southern dessert tribute to the King of Rock ‘n’ Roll!

Ingredients

Scale
  • 1 box yellow cake mix (plus eggs, oil, and water per package)

  • 1 can (20 oz) crushed pineapple (with juice)

  • 1 cup granulated sugar

  • 1 package (8 oz) cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 34 cups powdered sugar

  • 1 teaspoon vanilla extract

  • Optional toppings: chopped pecans, shredded coconut, banana slices

Instructions

  1. Bake the Cake:
Prepare the yellow cake mix according to the package instructions. Bake it in a 9×13-inch baking pan and let it cool slightly.

  2. Prepare the Pineapple Topping:
In a small saucepan, combine the crushed pineapple (with juice) and granulated sugar. Bring to a boil, then simmer for 3–5 minutes.

  3. Assemble the Cake:
Poke holes across the surface of the slightly warm cake. Pour the pineapple mixture evenly over the top, allowing it to soak in.

  4. Make the Frosting:
In a mixing bowl, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, continuing to beat until creamy.

  5. Frost and Finish:
Spread the cream cheese frosting evenly over the cooled, pineapple-soaked cake. Garnish with pecans, coconut, or banana slices if desired.

  6. Serve and Enjoy:
Chill briefly if you prefer a firmer frosting. Slice, serve, and celebrate like the King!

Notes

  • Use pineapple in juice, not syrup, to avoid overly sweet results.

  • Make the cake a day ahead; the flavors deepen overnight.

  • Add a peanut butter drizzle for a true Elvis-style twist!
