Ingredients

  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup (115 g) neutral oil (or melted butter)
  • 3/4 cup (150 g) granulated sugar (or 1/2 cup sugar + 1/4 cup brown sugar)
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup plain yogurt or buttermilk
  • 3 very ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips or dried fruit (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, whisk oil and sugar until glossy. Add eggs one at a time, beating lightly, then stir in the vanilla and yogurt. Fold in the mashed bananas until combined.
  4. Pour the dry ingredients into the wet mixture and fold gently until just combined. Fold in nuts or chips if using.
  5. Pour batter into the prepared pan, smoothing the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the loaf cool in the pan for 10–15 minutes, then lift onto a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for optimal sweetness and moisture. Avoid overmixing the batter to keep the bread tender.
