A quick and comforting one-pan dinner featuring savory ground beef and broccoli.
Ingredients
- 1 lb ground beef (80/20 for flavor)
- 1 large head of broccoli, cut into florets
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp oyster sauce (optional)
- 1 tbsp rice vinegar
- 1 tsp brown sugar or maple syrup
- 2 tbsp vegetable oil
- 1/2 cup beef or chicken stock
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- Salt and pepper to taste
- Cooked rice or noodles, to serve
Instructions
- Prep: Chop the broccoli and slice the onion. Mince garlic. Have your cornstarch slurry ready.
- Brown the beef: Heat 1 tbsp oil in a large skillet over medium-high heat. Add ground beef, season lightly with salt and pepper, and cook until browned, breaking it into small pieces. Drain excess fat if desired.
- Sauté aromatics: Push the beef to one side, add remaining oil, and sauté onion until translucent. Add garlic and cook 30 seconds.
- Cook broccoli: Add broccoli florets and stock, cover for 2–3 minutes to steam and tenderize.
- Sauce it up: Stir in soy sauce, oyster sauce (if using), rice vinegar, and brown sugar. Stir to combine.
- Thicken: Add cornstarch slurry and stir until the sauce thickens and coats the beef and broccoli.
- Serve: Taste and adjust seasoning. Serve over rice or noodles and enjoy.
Notes
Do not overcrowd the pan while browning beef. Use fresh broccoli for the best texture. Leftovers reheat well with a splash of water.
