Description

A guilt-free tea loaf packed with fall flavors, perfect for enjoying with a warm cup of tea.


Ingredients

  • 2 cups whole wheat flour (or gluten-free flour)
  • 1 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 banana, mashed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1/2 cup chopped nuts or dried fruits (optional)
  • A pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by lining it with parchment paper or greasing it.
  3. Mix dry ingredients in a large bowl: whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Prepare the wet ingredients in another bowl: applesauce, honey (or maple syrup), vanilla extract, and mashed banana.
  5. Combine the wet ingredients with the dry ingredients gently until just combined.
  6. Fold in the optional nuts or dried fruit.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve with your favorite hot beverage.

Notes

Use ripe bananas for sweetness. Adjust sweetener according to taste. Check for doneness after 40 minutes.
