Ingredients
- 1 ½ cups whole wheat flour
- ½ cup unsweetened applesauce
- ½ cup mashed ripe bananas (about 1 large or 2 small bananas)
- ½ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 1 cup mixed dried fruits (like raisins, cranberries, or apricots)
- ¼ cup chopped nuts (optional, like walnuts or almonds)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan with cooking spray or parchment paper.
- Mix the unsweetened applesauce, mashed bananas, honey (or maple syrup), and vanilla extract in a large mixing bowl until fully incorporated.
- Combine the whole wheat flour, baking powder, baking soda, salt, and cinnamon in another bowl.
- Add the dry ingredients to the wet ingredients, stirring until just combined—do not overmix.
- Fold in your mixed dried fruits and optional nuts.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 45-55 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
