Description
Savory shredded chicken cooked in a creamy ranch sauce, topped with bacon and cheese, perfect for cozy dinners.
Ingredients
- 2.5–3 pounds boneless, skinless chicken breasts or thighs
- 8 ounces cream cheese, softened
- 1 packet (1 ounce) ranch seasoning mix
- 1 cup shredded sharp cheddar cheese
- 6 slices turkey bacon, cooked and crumbled
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 small onion, finely chopped (optional)
- 2 tablespoons fresh chopped chives or parsley for garnish
- Salt and pepper to taste
Instructions
- Season the chicken lightly with salt and pepper and place it in the bottom of a 6-quart slow cooker.
- Scatter the chopped onion and minced garlic over the chicken.
- Add 1/2 cup chicken broth.
- Cover and cook on LOW for 4–5 hours, or on HIGH for 2–3 hours until the chicken is tender.
- Remove the chicken, shred it with two forks, return it to the pot, add cream cheese, ranch mix, and half the shredded cheddar, and stir until creamy.
- Sprinkle the crumbled turkey bacon and remaining cheddar over the top, cover for 5–10 minutes to melt the cheese.
- Garnish with chives and serve over bread, rice, or potatoes.
Notes
Use boneless chicken thighs for extra richness. Soften cream cheese for smooth blending. Check for doneness at the lower end of the cooking time.
