Ingredients
- 4 boneless, skinless chicken breasts (about 2 pounds), salted and peppered
- 6 slices turkey bacon, roughly chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)
- Fresh basil or parsley for garnish
- A squeeze of lemon juice (optional)
Instructions
- Brown the bacon and onions: In a skillet over medium heat, cook the turkey bacon until lightly crisp. Add the onion and cook until soft.
- Assemble in the slow cooker: Place the chicken breasts in the bottom of the crockpot and sprinkle the sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes over the chicken. Pour the chicken broth around the sides.
- Add the creamy components: Pour the heavy cream over the top and scatter the grated Parmesan. Spoon the cooked bacon and onions across the chicken.
- Cook low and slow: Cover and cook on LOW for 240–300 minutes or HIGH for 120–180 minutes, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
- Thicken the sauce: Remove the chicken to a plate and stir the cornstarch slurry into the sauce. Return the chicken to the crockpot and cook for an additional 10–15 minutes until the sauce is thickened.
- Finish and serve: Stir in a squeeze of lemon juice if using, garnish with fresh basil or parsley, and serve over mashed potatoes, pasta, or roasted seasonal vegetables.
Notes
Use room-temperature chicken for even cooking. Browning the bacon and onion adds depth to the flavor, but can be skipped if short on time.
