Description

Crockpot Chicken Tortellini Soup is a cozy, slow-cooked comfort dish filled with tender chicken, hearty vegetables, and cheesy tortellini. It’s the perfect fall meal for busy weeknights or lazy weekends.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast or thighs
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 6 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 cups refrigerated cheese tortellini (added at end)
  • 2 cups baby spinach (optional)
  • Freshly grated parmesan, for serving


Instructions

  1. Place chicken, onion, garlic, carrots, celery, herbs, and broth in the crockpot. Stir gently.
  2. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  3. Remove chicken, shred with forks, and return to the crockpot.
  4. Add tortellini and cook on HIGH for 15–20 minutes, or until pasta is tender.
  5. Stir in baby spinach just before serving, if using. Let it wilt.
  6. Serve hot with freshly grated parmesan and optional red pepper flakes.

Notes

Add tortellini at the end to avoid overcooking. To make it creamier, stir in 1/2 cup of cream before serving. Use chicken thighs for extra rich flavor.
