Description

This Crock Pot Marry Me Chicken makes creamy, tasty chicken with sun-dried tomatoes and garlic. It cooks low and slow, so the chicken stays soft and juicy. It is easy, rich, and perfect for weeknights or guests.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley (for garnish)


Instructions

  1. Place the chicken breasts in the crock pot.
  2. In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken in the crock pot.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender.
  5. Serve with pasta, rice, or mashed potatoes and garnish with fresh basil or parsley.

Notes

Use chicken breasts of similar size so they cook evenly. If the sauce is too thin, remove the chicken and simmer the sauce to thicken or stir in a cornstarch slurry. Taste and adjust seasoning before serving.
