Ingredients

  • 4 boneless, skinless chicken breasts (about 1 to 1½ lb)
  • 1 cup plain breadcrumbs
  • 1 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt, plus more to taste
  • ½ tsp freshly ground black pepper
  • 2 large eggs, beaten
  • 3 tbsp olive oil (for baking/drizzling)
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1 cup low-sodium chicken stock
  • ½ cup heavy cream
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving


Instructions

  1. Preheat your oven to 425°F (220°C). Pat chicken dry and pound to even thickness for even cooking.
  2. Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a shallow bowl.
  3. Dip each chicken breast in beaten eggs, then press into the Parmesan-breadcrumb mixture until fully coated.
  4. Arrange on a parchment-lined baking sheet and drizzle with olive oil.
  5. Bake for 18–22 minutes, flipping once halfway, until the crust is golden and chicken reaches 165°F (74°C). For extra crispness, broil for 1–2 minutes at the end.
  6. Melt butter in a skillet over medium heat. Add minced garlic and sauté 1–2 minutes until fragrant but not browned.
  7. Pour in chicken stock and simmer for 3 minutes to reduce slightly.
  8. Stir in heavy cream and simmer until sauce thickens, about 3–5 minutes. Season with salt and pepper, then finish with chopped parsley and a squeeze of lemon.
  9. Spoon the garlic sauce on plates, place the crispy chicken on top, and drizzle more sauce over the chicken. Serve with roasted seasonal vegetables or a cozy pasta side.
