A comforting and delicious dish featuring crispy chicken breasts coated in breadcrumbs and Parmesan, served with a rich garlic sauce.
Ingredients
- 4 boneless, skinless chicken breasts (about 1 to 1½ lb)
- 1 cup plain breadcrumbs
- 1 cup finely grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt, plus more to taste
- ½ tsp freshly ground black pepper
- 2 large eggs, beaten
- 3 tbsp olive oil (for baking/drizzling)
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1 cup low-sodium chicken stock
- ½ cup heavy cream
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Preheat your oven to 425°F (220°C). Pat chicken dry and pound to even thickness for even cooking.
- Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a shallow bowl.
- Dip each chicken breast in beaten eggs, then press into the Parmesan-breadcrumb mixture until fully coated.
- Arrange on a parchment-lined baking sheet and drizzle with olive oil.
- Bake for 18–22 minutes, flipping once halfway, until the crust is golden and chicken reaches 165°F (74°C). For extra crispness, broil for 1–2 minutes at the end.
- Melt butter in a skillet over medium heat. Add minced garlic and sauté 1–2 minutes until fragrant but not browned.
- Pour in chicken stock and simmer for 3 minutes to reduce slightly.
- Stir in heavy cream and simmer until sauce thickens, about 3–5 minutes. Season with salt and pepper, then finish with chopped parsley and a squeeze of lemon.
- Spoon the garlic sauce on plates, place the crispy chicken on top, and drizzle more sauce over the chicken. Serve with roasted seasonal vegetables or a cozy pasta side.
