Ingredients
- 2 medium apples (Granny Smith or Honeycrisp work well)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 1 package of flour tortillas (10-inch size works best)
- 1/2 cup granulated sugar (for coating)
- 1/2 teaspoon ground cinnamon (for coating)
- 1 cup butter, melted (halal)
- Cooking spray or additional butter for greasing
Instructions
- Prepare the apples: Start by peeling, coring, and dicing your apples into small cubes. In a large mixing bowl, toss the diced apples with lemon juice, 1 teaspoon ground cinnamon, nutmeg (if using), brown sugar, and cornstarch until well coated.
- Assemble the roll-ups: Lay out one flour tortilla on a clean surface. Place a spoonful of the apple mixture in the center of the tortilla. Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom to the top. Repeat this process with the remaining tortillas and apple mixture.
- Add a crispy coating: Preheat your oven to 375°F (190°C). In a small bowl, mix together granulated sugar and 1/2 teaspoon cinnamon for the coating. Brush each roll-up lightly with melted butter and then roll them in the cinnamon-sugar mixture, ensuring they’re fully coated.
- Bake: Place the roll-ups on a greased baking sheet, seam side down, and bake for 15-20 minutes or until golden brown and crispy. Remove from the oven and let cool for a few minutes before serving.
Notes
For the best flavor, use a mix of sweet and tart apples. Don’t overfill the tortillas to avoid messy roll-ups.
