Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 1 cup breadcrumbs (use gluten-free if necessary)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 large egg, beaten
- Olive oil (for spraying)
Instructions
- Preheat your air fryer to 400°F (200°C).
- Prepare the zucchinis by rinsing and drying them. Slice into rounds about 1/4 inch thick.
- Set up your breading station with one bowl for the beaten egg and another for the breadcrumb mixture.
- Coat each zucchini slice in the egg, then dredge in the breadcrumb mixture. Place on a plate.
- Air fry the zucchini slices in a single layer, lightly sprayed with olive oil.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with marinara sauce or your favorite dipping sauce.
Notes
Use fresh zucchinis for best texture, and don’t overcrowd the air fryer basket for optimal crispiness.
