Description

Enjoy crispy, golden zucchini coated with Parmesan, perfect as a snack or side dish for any occasion.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1 cup breadcrumbs (use gluten-free if necessary)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 large egg, beaten
  • Olive oil (for spraying)


Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Prepare the zucchinis by rinsing and drying them. Slice into rounds about 1/4 inch thick.
  3. Set up your breading station with one bowl for the beaten egg and another for the breadcrumb mixture.
  4. Coat each zucchini slice in the egg, then dredge in the breadcrumb mixture. Place on a plate.
  5. Air fry the zucchini slices in a single layer, lightly sprayed with olive oil.
  6. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
