Ingredients
- 4 medium-sized potatoes, peeled and cubed
- 1/2 cup finely chopped onion
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon green chili, finely chopped (adjust to your spice level)
- 1 teaspoon garlic powder
- 1 teaspoon cumin powder
- Salt, to taste
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs for a gluten-free option)
- 1 large egg (or a flax egg for a vegan alternative)
- Cooking spray or olive oil for frying
Instructions
- Boil the potatoes: In a large pot, add the cubed potatoes and fill with water. Boil until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
- Mash the potatoes: In a large mixing bowl, add the boiled potatoes and mash them with a fork or potato masher until smooth.
- Mix the ingredients: To the mashed potatoes, add the chopped onion, cilantro, green chili, garlic powder, cumin powder, and salt. Stir to combine.
- Bind the mixture: Sprinkle in the breadcrumbs and add the egg. Mix until everything is well combined and you can form patties.
- Form the patties: Using your hands, take a handful of the potato mixture and shape it into small, flat patties. Aim for about 1/2 inch thick. Place them on a plate.
- Preheat the air fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Air fry the patties: Lightly spray the air fryer basket with cooking spray. Place the potato patties in a single layer, making sure they don’t touch. Spray the tops with a little olive oil for extra crispiness. Cook for 15-20 minutes, flipping halfway, until golden brown and crispy.
- Serve and enjoy: Once cooked, remove the potato patties from the air fryer. Serve hot with your favorite dipping sauce.
Notes
Don’t overcrowd the air fryer. Ensure the potatoes are well-drained to avoid soggy patties.
