Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup breadcrumbs (preferably panko for extra crunch)
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs
- Olive oil spray (or melted butter)
Instructions
- Prep the shrimp: Rinse the shrimp under cold water and pat them dry with paper towels.
- Make the coating: In a shallow bowl, combine the breadcrumbs, grated Parmesan, minced garlic, parsley, onion powder, paprika, salt, and black pepper.
- Prepare the egg wash: In another bowl, beat the eggs until well combined.
- Coat the shrimp: Dip each shrimp into the egg wash, then roll it in the breadcrumb mixture until evenly coated.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Arrange the shrimp: Lightly spray the air fryer basket with olive oil and place the shrimp in a single layer.
- Air fry the shrimp for approximately 8-10 minutes, flipping halfway through.
- Serve and enjoy: Once cooked, transfer the shrimp to a serving platter and sprinkle with additional Parmesan and parsley.
