Ingredients

  • 4 medium artichokes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • Salt and pepper, to taste
  • Lemon wedges for serving
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh parsley, chopped


Instructions

  1. Prepare the Artichokes: Start by filling a large bowl with water and the juice of half a lemon. This will keep your artichokes from browning. Trim the tops off the artichokes (about an inch) and cut the stem to create a flat base. Pull apart the leaves gently to create space for seasoning. As you prepare, place them in the lemon water to prevent browning.
  2. Season the Artichokes: After about 10 minutes, remove the artichokes from the lemon water and drain well. In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the seasoning mixture all over the artichokes, making sure to get in between the leaves for maximum flavor.
  3. Air Fry the Artichokes: Preheat your air fryer to 380°F (193°C). Place the seasoned artichokes in the air fryer basket, cut side up. You may need to do this in batches, depending on the size of your air fryer. Cook for 15-20 minutes, or until the outer leaves are crispy and the hearts are tender. Flip halfway through for even cooking.
  4. Make the Lemon Herb Aioli: While the artichokes are cooking, prepare the aioli. In a bowl, combine the mayonnaise, Dijon mustard, minced garlic, lemon juice, lemon zest, and chopped parsley. Mix until well combined and season with salt and pepper to taste. Adjust lemon juice according to your preference for tanginess.
  5. Serve: Once the artichokes are finished cooking, serve them hot with the lemon herb aioli and a few lemon wedges on the side. Enjoy!
