Ingredients
- 2 pounds of baby potatoes (red or yellow)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika (sweet or smoked)
- Salt and pepper, to taste
- Fresh herbs (like rosemary or thyme), optional for garnish
- Parmesan cheese, grated (optional)
Instructions
- Prep the potatoes: Rinse the baby potatoes under cold water. Pat them dry with a clean kitchen towel. Cut them in half if preferred.
- Season: In a large mixing bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the baby potatoes and toss until well coated.
- Preheat the air fryer: Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.
- Air fry the potatoes: Place the potatoes in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking halfway through.
- Check for doneness: The potatoes should be golden brown and crispy on the outside.
- Serve: Transfer to a serving dish and sprinkle with fresh herbs or Parmesan cheese if desired.
Notes
For best results, use waxy potatoes like baby reds or yellows. Don’t skip preheating the air fryer for optimal crispiness.
