Ingredients
- 1.5 kg ripe tomatoes (roma or cherry)
- 1 bulb garlic
- 1 medium onion
- 2 tbsp olive oil
- 500 ml vegetable broth
- 150 ml heavy cream or coconut cream

- ½ tsp black pepper
- 1 tsp sugar (optional)

Instructions
- Preheat oven to 400°F (200°C). Slice tomatoes in half and place cut-side up on a baking sheet with peeled garlic cloves and sliced onion. Drizzle with olive oil, season with salt and pepper, and roast for 30–35 minutes until soft and caramelized.
- Transfer roasted vegetables to a blender. Add broth and blend until smooth. For a chunkier texture, pulse instead of blending fully.
- Pour blended mixture into a large pot over medium heat. Stir in cream and simmer for 10–15 minutes. Taste and adjust seasoning. Add sugar or extra spices if needed.
