Description

Ingredients

  • 1.5 kg ripe tomatoes (roma or cherry)
  • 1 bulb garlic
  • 1 medium onion
  • 2 tbsp olive oil
  • 500 ml vegetable broth
  • 150 ml heavy cream or coconut cream
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp sugar (optional)
  • Fresh basil or thyme for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Slice tomatoes in half and place cut-side up on a baking sheet with peeled garlic cloves and sliced onion. Drizzle with olive oil, season with salt and pepper, and roast for 30–35 minutes until soft and caramelized.
  2. Transfer roasted vegetables to a blender. Add broth and blend until smooth. For a chunkier texture, pulse instead of blending fully.
  3. Pour blended mixture into a large pot over medium heat. Stir in cream and simmer for 10–15 minutes. Taste and adjust seasoning. Add sugar or extra spices if needed.

Notes

Use ripe, in-season tomatoes for the deepest flavor. Roasting the garlic adds buttery richness. To make it vegan, use coconut cream or a dairy-free substitute. Serve with sourdough or grilled cheese for a complete meal.
